These are going to taste divine, and they’re so much easier to make than you think! These healthy strawberry rhubarb bars bars are seriously melt-in-your-mouth perfection.

This Is Such An Easy Recipe To Pull Together. First, preheat your oven for 350 degrees and grab a 9x13 pan and line the pan with parchment paper or lightly greased, then set it aside.

How To Make Almond Flour Easy

      Making homemade almond flour is very simple! Just add raw almonds almonds to a blender and blend until a fine powdery flour is achieved.

You can also just use store bought almond flour or Almond meal. Almond meal and almond flour can be used interchangeably and they are great gluten free alternative to flour.

HOMEMADE ALMOND FLOUR VS STORE BOUGHT

If you enjoy baking with almond flour, I highly recommend making it at home! Almond flour is perfect alternative especially if you are needing to eat grain free lifestyle and it is ready in just minutes when you use a Food Processor or Blender. I find that homemade almond flour tastes fresher and is usually more cost-effective than store bought. I typically use my vitamix for a finely texture of flour, but a food processor can definitely be work the flour will just be slightly grainier.

Next add coconut oil, syrup, and salt to your flour until well blended. Then press ¾ of mixture in your baking dish press -reserving the other 1/4 for topping.
pop it in the oven to pre-bake for 10-15 minutes or so, until it’s nicely golden brown.
Meanwhile, work on the filling. To make it, In a medium pan I mix fresh strawberries and rhubarb, water, and just a bit of xylitol for sweetness. This is where the sweetness of the fruit can really shine.

Combine enough Water in a cup to liquefy the tapioca flour. Pour the mixture in the fruit mixture, whisking to thicken.

Once the pre-baked crust has cooled slightly, spoon the fruit filling on top. Scatter on the remaining crumb mixture, and bake!

Cool and cut into 12 bars. Great served with my vanilla bean ice cream or topping below.

Strawberry Rhubarb Bars- Grain Free Sugar Free

These strawberry rhubarb bars combines the pie flavors of strawberries and rhubarb perfectly in an delicious crust. You’re in for a treat!

Ingredients
  

  • 3 1/2 cups almond flour
  • 1/2 cup coconut oil
  • 1/2 cup basic xylitol syrup
  • 1 tsp Himalayan sea salt
  • 1 Tbsp vanilla extract

Filling:

  • 2 cups rhubarb chopped in 1/2” slices (or other fruit for variations)
  • 1 cup strawberries cleaned
  • 1/2 cup filtered water
  • 1 tsp vanilla extract
  • 1/4 cup xylitol or green stevia
  • 1/4 cup tapioca flour or arrowroot
  • 1 tsp cinnamon
  • 1 strawberries for garnish per serving

Topping:

  • 1 cup Greek yogurt
  • 1 cup cream cheese or yogurt cheese
  • 1 tsp vanilla
  • ¼ cup xylitol or sweeten to taste

Instructions
 

  • How to make Xylitol Syrup: 2 : 1 ratio
    1/2 C xylitol and 1/2 C water into a small saucepan. Heat on Medium -high, stirring regularly until it comes to a boil. reduce heat to medium, simmer for 5 minutes or until xylitol is completely dissolved.
  • Preheat oven to 350 degrees.
    Pour 3 cups of almonds into the food processor. Process into flour or use 3 ½ cups of almond flour.
    Add oil, syrup, salt and vanilla. Process until well blended. In an oiled 9x13” baking dish press 3/4 of the mixture reserving the other 1/4 for topping.
    Option: Add cinnamon & Xylitol to taste.
    Bake bottom layer for 10-15 minutes. Remove from oven.
  • Filling: In a medium saucepan add water, rhubarb, strawberries and xylitol. Bring to a boil then to low heat. Combine enough water in a cup to liquefy the tapioca flour.
    Pour the mixture slowly into the fruit mixture whisking to thicken. Turn burner off and cool. Note: This may be done ahead of time.
  • Spread the filling over bottom layer of baked crust. Sprinkle with topping or remainder of the dough.
    Bake 350 degrees for 25-20 minutes until the top starts to brown.
    Cool and cut into 12 bars. Great served with my vanilla bean ice cream or topping below.
  • Stir all ingredients to cream together, Top the bars with yogurt topping and garnish with a sliced strawberry. Enjoy!
