Easy Protein Snack Without Grain
Making homemade coconut date bites recipe is very simple! These no bake energy bites with coconut are the perfect energy boost go-to snack!
Keep in mind dates are high in natural sugar so please enjoy in moderation.
Just add all ingredients but salt in food processor or Vita-mix; start slow on variable speed to combine then slowly turn up speed until well blended.
Pour into a parchment lined small bread pan and smooth top. Sprinkle salt on top and freeze for one hour.
Remove from freezer and pan. Transfer to a cutting board and slice in 14 pieces. Sprinkle with coconut and serve.

Ingredients
- 1 cup Dates medjool dates
- 2 Tbsp Coconut Oil
- 1/2 Cup Tahini
- 1/2 tsp Cardamom
- 1/8 tsp Himalayan Salt
- 1/8 Cup finely ground Coconut for garnish
Instructions
- Leave the salt aside and place all the ingredients in food processor or vita mix; start slow on variable speed to combine the slowly turn up until blended.
